I love a good dinner party – any excuse to invite a few friends over and open a bottle a wine.

But it’s easy to make excuses to not host – because of all the work involved.

Although honestly, most of it is self-inflicted, it just never needs to be that complicated!

People are happy to come together – and to open your home and feed people, it’s such a joyful thing to do. So I designed a very simple menu that is delicious and festive that your family and friends will love. Without the extra steps and complication – which you’ll love too! 

This is really good, no-fuss food. Something that you can serve up, sit down and actually enjoy! So send out the invite, don’t worry we’ve got dinner all sorted – it’s going to be great.


A Down to Earth Halloween Menu

The star of the show is pumpkin.

It’s perfect for the season, and so delicious when it’s roasted! Like magic, we’re going to turn one single pumpkin – into a full dinner!

The Plan

The night before, or the morning of the dinner
– roast the pumpkin and the garlic together. On a second tray, you can roast chicken for shredding into the Harvest Salad (or you can buy a pre-cooked rotisserie chicken)

Once the pumpkin and garlic is roasted, you’ll divide it into three:

  • For the hummus: Scoop out 1 cup of roast pumpkin, plus 3-5 garlic cloves
  • For the pizza: Slice pieces of pumpkin, plus 3-5 garlic cloves
  • For the salad: Cut up 2 cups of bite-size pieces of pumpkin, plus the remaining garlic cloves

If you’re feeding more or less people, adjust it as you need.

If you have any leftover pumpkin – prep it and store it in your fridge for meals throughout the week.


Serving Plan

I love a family style setting, everything at the table and people can help themselves.

You can put out the hummus with veggie sticks to start, so people have something delicious to munch on. And then serve the pizza and salad together.

The pizza can be built in advance – so that you simply pop it in the oven 15 minutes before dinner.

Everything else can be prepped in advance and eaten at room temperature. This would make a great meal for a gathering, but also for dinner at home alone with the family.
