Down to Earth Halloween Dinner Recipes

For this dinner party menu, the star of the show is pumpkin.

With one single pumpkin, you can easily build three different dishes. So let’s get started by roasting that pumpkin!

Preheat your oven to 400f/200c.

Choose a 2-3 pound pumpkin, sugar pumpkins are delicious!

Slice it up into segments, leave the skin on, that’s fine.

Slice off the very top off of an entire bulb of garlic and add it to the tray. Drizzle 2-3 tablespoons of olive oil all over the pumpkin and garlic

Sprinkle with salt. Roast in the oven for 30 minutes

Once it’s cooled, remove the skin. It peels off easily and now you can prep it for your dishes!


Roasted Pumpkin Hummus

This hummus is velvety and smooth, with a sweet pumpkin flavour. We’ve sprinkled dukkah on top, to give it a warm spicy kick. You can buy the seasoning, or blend it up at home.

Hummus ingredients:

1 cup roasted pumpkin

2 cans chickpeas, drained

3-5 roasted garlic cloves

5 tablespoons olive oil

salt & pepper

water to thin

Hummus directions:

In a food processor, blend the chickpeas and olive oil to get it started

add the pumpkin puree, garlic cloves, salt and pepper

add water to thin if needed

continue blending until all the ingredients are blended, and the hummus is smooth

if you have it on hand, add 1 tablespoon tahini and a squeeze of half a lemon

To serve, sprinkle dukkah on top and drizzle olive oil

Dukkah ingredients:

1/2 cup blanched almonds

2 tablespoons coriander seed

2 tablespoons cumin seed

2 tablespoons sesame seed

1 tablespoon dried thyme

1/2 teaspoon salt

Dukkah directions:

In a food processor, crush almonds until coarsely ground

pour them out into a bowl

mix in all the other ingredients

toast on a dry skillet until they get a nice color


White Pumpkin Pizza

You can make your own pizza base, or buy it pre made… but I like the flavour and simplicity of using flat bread with this recipe. Go to a good baker, get yourself some fresh Lebanese flat bread and you can easily build these pizzas before guests come, or let people get involved and add their own favorite toppings!

ingredients:

Store bought flat bread

1/2 cup mozzarella

2 tablespoons feta cheese

2 tablespoons olive oil

roast pumpkin

or, other toppings: prosciutto, black olives, chili…

directions: 

brush olive oil on top of the bread and spread 2 roasted garlic cloves

sprinkle mozzarella and feta cheese

add your slices of roast pumpkin

bake in the oven to melt the cheese


Roast Pumpkin & Chicken Harvest Salad

Salad goes so well with pizza, and depending on what you add – it can be very filling in itself!

ingredients:

a bag of mixed salad greens

shredded roast chicken (homemade or buy a whole rotisserie chicken)

bite-size pieces of roast pumpkin

extra toppings to build your salad:

dukkah sprinkles

black olives

apple or grapes

candied walnuts or almonds

feta cheese

red onion

avocado…

Serve it with a simple balsamic dressing. I added dried orange peel and a pinch of dried thyme to the dressing.
