So we’re at this little family restaurant, in the middle of a mountain in Colombia – and we get served the most amazing pancakes that any of us had ever seen. Tall & fluffy – they were incredible!
We had to know the secret… extra baking powder? A special flour? Years of practice? We had to ask! Turns out is was so simple, anyone can make Mile High Pancakes!
We made them the very next morning at home! Instant success. We’ll never need to suffer another flat pancake again!
You can use any basic pancake batter recipe. There’s no mystery there – I like this one by Alton Brown. Just make sure the batter is not too thin…
It turns out – the secret is not the batter, it’s all about the pan! Get yourself a little casserole dish – it’s going to revolutionize your breakfast! Look for one that is the exact size you want your pancake to be. I found a similar one on Amazon so you know what to look out for.
You’ll be serving mile high, homemade, restaurant style pancakes in no time!
- Heat up your casserole dish and when hot, place a nob of butter
- pour in the batter and cover the lid
- cook for 3-4 minutes, then flip
- cook for another 1-2 minutes
