I just hosted a very good friend’s birthday party and we had such a blast! We chatted, sipped champagne and ate for hours. If you’ve ever hosted, I know you’re thinking: the host never gets to enjoy all the fun, we’re stuck in the kitchen preparing the food! Not this time! I planned a stress-free brunch menu that was not only healthy, light and delicious – but gave me the freedom to kick back with my friends and enjoy the celebration.
The reason this dish is so party-perfect, is because you can prepare it in advance and serve it at room temperature. There’s no running back and forth from the kitchen, trying to time everything out perfectly. Serve, sit and enjoy!
3 tbsp yogurt (original recipe called for mayonnaise, but I choose yogurt as a healthier option)
salt & pepper to taste
In a food processor or blender, blend all of the ingredients together until you have a creamy consistency.
Place it the refrigerator until you’re ready to serve.
In a bowl mix the creamy avocado sauce with cooked pasta. Garnish with cilantro and sprinkle some chili flakes if you like it spicy!
ps – Before I decided on serving this, I had first tested the recipe out one night for dinner – and not only did my husband love it, but it goes to show how versatile this dish is – you can make it for brunch, lunch or dinner – with a side of salad, fish, chicken or crusty bread.
