I love the look of a carved pumpkin on halloween, it’s a time honored tradition, but it feels a bit like a waste of a good soup. Me, I want to have my pumpkin and eat it too! I collected these creepy bugs from the Biodiversity Library and printed them out onto vellum paper, which is semi-transparent. The effect is perfectly creepy. The pumpkins are from a little shop around the corner. They’re still dusty, everything in the shop is. After halloween, I’ll wash them off, cut them up and cook up a big batch of pumpkin soup. I actually started off with four, but now, there are only three… it was delicious.

Pumpkin and Beetle Soup

  • 1 dusty pumpkin
  • 1.5 cups vegetable stock (really depends on your pumpkin size, the water should just cover the pumpkin in the pan)
  • 1 onion
  • 1 or 2 cloves of garlic
  • fresh thyme
  • 1 tsp cumin & paprika (or cinnamon & nutmeg if you prefer)
  • 1/2 cup soaked cashew nuts – soak 4 hours (a great substitute to cream: adds a lovely creaminess and gives cows a break!)
  • 2 tablespoons coconut oil
  • beetles – optional

  1. Heat up the coconut oil in a soup pan
  2. Sautee the onions for about 3-5 minutes. Add in your spices and herbs
  3. Cook for a few more minutes until fragrant
  4. Add in diced pumpkin
  5. Cover with vegetable stock
  6. Cook for about 20 minutes until tender
  7. Let the soup cool
  8. Put the cashew nuts in a blender along with the soup and blend up until creamy
  9. Serve with avocado slices, feta cheese & toasted cashews

Have a spooky holiday! And remember: waste not, want not…

I thought you might like to make your own infested pumpkins! Click on the image below and print it out onto vellum paper. Cut out the images and try to cut close to and around all their little appendages. Glue them down just with dab of glue right in the center, so that they are free to flap around – it’s really creepy!
