Do you have a cast-iron dutch oven? For bread making, you don’t need to spend a lot of money on Le Creuset or Staub. A cheap cast-iron dutch oven works incredibly well and only costs a few bucks. The dutch oven is easier to use because it traps the steam so there’s no need to worry about a pan of hot water. Just bake with the covered lid for 30 minutes, remove lid and cook for about 10-20 minutes.
You can also use a plain sheet pan. Just put any vessel – a regular baking pan – in the rack below the sheet pan and once you place the bread on the sheet pan, pour water in the baking pan and immediately close the oven door. This creates the steam needed for the good crumb.
Personally, I don’t bother with the pan of water/spray. Some say it could damage your oven depending on the wiring. Also, it’s not as effective as cast-iron. Cast-iron traps heat and when you cover with the lid, you have the best substitute to trap steam at home.
